Undoubtedly, the cod salad is the most refreshing and summery of the recipes with this fish.

Cod Salad step by step
The Cod salad is the perfect mix of fish and summer vegetables. Here you have this recipe with cod step by step.Leave them resting in a bowl with a little of their canning juice, a splash of vinegar, a touch of salt and pepper and the garlic clove crushed or finely chopped. Mix everything well. The longer you let them marinate, the more they will taste, so if you can prepare them the day before, so much the better.
Next, we start with the vegetables. You have to remove the white parts inside the half peppers, and also the seeds.
Then, let's cut them into small squares or julienne.
In the case of the onion half, you have to peel it and cut it into very thin cubes.
Now let's go to heat a frying pan, and with a light trickle of oil, we are going to add the onion to brown a little.
To cook the peppers, we will also arrange them on the pan, without adding additional oil. The idea is to cook as if they were on an iron.
Leave cook vegetables for 5 or 6 minutes, with medium heat, stirring or turning them when necessary.
Then turn off and remove the onions and peppers.
Now let's clean the lettuce leaves. First, we passed them under a stream of cold water, and then, I immerse them in a bowl of water mixed with a splash of vinegar, for a few minutes.
You also have to wash the tomato. Then you have to cut it into quarters and then into slices.
Finally, wash well the branch of parsley and cut the leaves into very thin squares. Reserve.
Place the lettuce leaves on a platter to form a bed.
In a bowl, mix the onion and peppers and season with salt and pepper. Pepper. Then add the cod and stir well.
Place the mixture in the center from the dish and decorate with the tomato.
Sprinkle with a good gush of oil olive and sprinkle with the chopped parsley.
Finally, add the marinated olives, like decoration.

If for some mysterious reason (and almost incompressible to me) you do not like salted cod, the good news is that you can use fresh cod, in two forms: raw or cooked.
If you like raw cod, I recommend cutting it into thin slices, and not mixing it with the other ingredients, but rather or directly on the bed of lettuce. If you prefer cooked cod, you can prepare it grilled, to preserve the light nature of this dish.
